Egg and Quinoa Breakfast Dish

Ingredients:
- 2 large eggs
- 2 slices of turkey bacon cooked and crumbled
- shredded cheddar cheese
- 1/3 cup leftover quinoa
- salt
- pepper
- poultry seasoning
- 1 cup ramekin dish
- Preheat oven to 350 degrees
- Spray Pam on the bottom and sides of the ramekin
- In a small bowl mix the eggs
- Season with salt, pepper, and poultry seasoning
- Fill a third of the ramekin with quinoa
- Add egg mixture on top of the quinoa
- Place ramekin on a baking sheet and bake in the oven for 20 minutes
- Take out the dish and add the crumbled bacon.
- Sprinkle the shredded cheese on top and put in the oven for another 3 minutes
- Take out of the oven and cool for a few minutes.
- Eat and enjoy
