Delicious Meatloaf with Mashed Cauliflower

Delicious Meatloaf
Number of Servings: 6
Prep Time: 5 minutes
Cook Time: 60 minutes
Total Time: 65 minutes
Ingredients:
     Meatloaf:
  • 1 lb of 93/7 ground beef
  • 3 tsp Worcestershire sauce
  • 1 egg
  • 1/2 cup bread crumbs
  • 2 tsp liquid smoke
  • 1/3 cup cheddar cheese
  • A dash of garlic powder, salt, Tabasco and Italian seasoning
  • 1/2 a 1 oz packet of ranch dry seasoning mix
  • 1/4 cup of french fried onions
     Sauce:
  • 4 tsp brown sugar
  • 1/3 cup ketchup
  • 1/3 cup chili sauce
Directions:
  1. Preheat the oven to 350 degrees.
  2. Slightly grease a loaf pan with PAM.
  3. In a large bowl mix all the meatloaf ingredients.
  4. Create a loaf shape out of mixture.
  5. Press loaf shape evenly into loaf pan.
  6. In a small bowl mix sauce ingredients.
  7. Spoon half the sauce onto meatloaf.
  8. Place prepared meatloaf into the oven for 50 minutes.
  9. After 40 minutes in the oven start working on the mashed cauliflower recipe.
  10. After 50 minutes in the oven take meatloaf out and glaze with the remaining sauce.
  11. Put meatloaf back in the oven for an additional 10 minutes.
  12. Take out of the oven and slice loaf into six equal parts.
  13. Enjoy!!

Mashed Cauliflower

Ingredients:
  • 1 medium head of cauliflower
  • 1/2 tbsp of 1/3 less fat Philadelphia cream cheese(soften)
  • 1/4 cup of low fat grated Parmesan cheese
  • dash of minced garlic, salt, Mrs. dash table blend, dry chives, and pepper
  • 3 tbsp butter(soften)
  • 1/8 cup of milk
  • 1/4 cup of cheddar cheese
Directions:
  1. Boil a pot of water over high heat.
  2. Cut the head of cauliflower into small pieces.
  3. Put the pieces into the boiling water.
  4. Return water to a boil and cook cauliflower for 6-8 minutes.
  5. Drain cauliflower.
  6. Pat cauliflower between several layers of paper towels.
  7. In a medium bowl blend cauliflower, cream cheese, Parmesan cheese, cheddar cheese, and milk.
  8. Season mashed cauliflower with minced garlic, salt, Mrs. dash table blend, dry chives, and pepper.

Healthy Reese's Pieces Peanut Butter Cookies

Cook Time: 10 minutes
Total Time: 20-30 minutes
Ingredients:
  • 1/4 cup light butter
  • 1/2 cup reduced fat peanut butter
  • 1/4 cup light applesauce
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup sugar
  • 1 and 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 72 Reese's Pieces
Directions:
  1. Preheat oven to 375 degrees.
  2. Mix in a large bowl butter, peanut butter, applesauce, brown sugar, and sugar.
  3. Beat eggs into mixture.
  4. Add flour, baking powder, and baking soda to mixture.
  5. Use a small ice cream scoop and a spoon to divide mixture into equal sizes onto an ungreased baking sheet.
  6. Place 3 Reese's Pieces onto each cookie
  7. Put cookies in oven for 10 minutes.
  8. Remove cookies to a cooling rack.

Crab Cakes with Remoulade Dipping Sauce

Crab Cakes with Remoulade Dipping Sauce

Prep Time: 5-10 minutes
Cook Time: 8 minutes
Total Time: 13-18 minutes
Ingredients:
  • 8 oz crab claw meat
  • 3/4 cup bread crumbs
  • 1/2 cup corn meal
  • 1/2 cup and 2 tbsp mayo
  • 1/2 cup milk
  • 1 egg
  • Italian seasoning to taste
  • 3 green onions
  • 1/4 cup ketchup
  • 1/3 cup horseradish
  • garlic powder to taste
  • Tabasco to taste
  • 1 tsp chili powder
  • 3 tbsp olive oil
Directions:
  1. Combine in a bowl the following:
    • 1/2 cup mayo
    • 1/4 cup ketchup
    • 1/3 cup horseradish
    • garlic powder to taste
    • Tabasco to taste
    • 1 tsp chili powder
  2. Chill the sauce until crab cakes are done
  3. Combine in a bowl the following:
    • 8 oz crab claw meat
    • 3/4 cup bread crumbs
    • 1/2 cup corn meal
    • 2 tbsp mayo
    • 1/2 cup milk
    • 1 egg
    • Italian seasoning to taste
    • 3 green onions
  4. Form the crab mixture into 6 cakes
  5. Heat olive oil in a deep skillet on medium-high heat
  6. Once skillet is hot add the crab cakes in batches
  7. Cook each crab cake side for 4 minutes
  8. Serve crab cake with the Remoulade dipping sauce

Beijing Beef

Beijing Beef

Prep Time: 35 minutes
Cook Time:15-25 minutes
Total Time: 50 minutes to an hour
Ingredients:
  • 4 tbsp soy sauce 
  • 4 tbsp corn starch
  • 1 onion
  • 1 red bell pepper
  • 1/2 a bottle of sweet and sour sauce(12 oz)
  • 1lb Sirloin Tip Steak Thin Cut
  • 2 tbsp sesame seeds
  • 1/2 tbsp garlic powder
  • 1 green bell pepper
  • 2 tbsp red wine vinegar
  • 2 eggs
  • salt
  • pepper
  • 4 tbsp water
Directions:
  1. Cut steak into bite sizes pieces and put them into a gallon size Ziploc.
  2. Mix 2 tbsp soy sauce, 2 tbsp corn starch, 2 tbsp sesame seeds, 1/2 tbsp garlic powder, 2 eggs, salt and pepper to taste, 4 tbsp water, and 2 tbsp sugar to create a marinade.
  3. Once everything is mixed pour mixture into ziploc bag that has the steak in it.
  4. Shake marinade into the ziploc bag and mix well.
  5. Put marinated steak into refrigerator for at least 30 minutes.
  6. While steak is marinating cut up the onion, red bell pepper, and green bell pepper.
  7. Once you take the steak out pour olive oil into a wok and preheat to 350 degrees.
  8. While the wok is preheating drain the steak pieces and marinade.
  9. Once drained start dusting the pieces with corn starch.
  10. When wok is ready start cooking pieces in batches.
  11. After three minutes take out the cooked pieces and dry on some paper towels.
  12. Repeat this step until all the pieces are cooked.
  13. Once all pieces are cook your veggies in the wok for 3 minutes.
  14. While the veggies are cooking mix together the sweet and sour sauce, 2 tbsp sugar, red wine vinegar, 2 tbsp soy sauce, and 1 tbsp corn starch. This mixture will be your sauce.
  15. Once the vegetables are done put the steak back into the wok and add the sauce. Mix the sauce until everything is coated. 
  16. Let the sauce thicken for 2 minutes.
  17. Serve with rice or noodles.

Egg and Quinoa Breakfast Dish

Egg and Quinoa Breakfast Dish

Prep time: 5 minutes    
Cook time: 23 minutes 
Total time: 28 minutes
Ingredients:
  • 2 large eggs 
  • 2 slices of turkey bacon cooked and crumbled 
  • shredded cheddar cheese 
  • 1/3 cup leftover quinoa 
  • salt
  • pepper 
  • poultry seasoning 
  • 1 cup ramekin dish 
Directions:
  1. Preheat oven to 350 degrees 
  2. Spray Pam on the bottom and sides of the ramekin 
  3. In a small bowl mix the eggs 
  4.  Season with salt, pepper, and poultry seasoning 
  5. Fill a third of the ramekin with quinoa 
  6. Add egg mixture on top of the quinoa 
  7. Place ramekin on a baking sheet and bake in the oven for 20 minutes 
  8. Take out the dish and add the crumbled bacon. 
  9. Sprinkle the shredded cheese on top and put in the oven for another 3 minutes 
  10. Take out of the oven and cool for a few minutes. 
  11. Eat and enjoy
